We use traditional methods to collect our wild lobster – each one is carefully caught and harvested undamaged from the sea by hand. While labour-intensive, this method has the advantage of leaving a minimal footprint on the marine environment with all unwanted catch able to be returned to the ocean unharmed.
Soon after landing, the lobster are sent directly to our specialist packing facilities at Auckland or Wellington airports, where they swim freely in our purpose built tanks until they’re ready to be sent to discerning diners throughout the world.
